3 Tablespoons muscovado sugar
1 Tablespoon sea salt
1 Tablespoon freshly ground black pepper
1 Tablespoon garlic salt
1 Tablespoon onion salt
1 Tablespoon ground allspice
1 Tablespoon ground coriander
1 Teaspoon ground ginger
Zest of one lemon
Zest of one lime
Zest of one orange
Just throw it all together and give it a good mix. It’ll store well in an airtight container in a cool dry place so you can afford to make up more and save for a later cookout if you like. Now where’s that bottle of rum………….?
